These days I’m trying to avoid the temptation to do really elaborate cooking–the kind that can end up sucking two or three hours away from what should be dissertation-writing time. But that doesn’t mean I have to eat instant soba or conbini corn dogs. Courtesy of my friend and former singing-to-kids-over-the-phone coworker Soness, here is a recipe for a simple-yet-tasty snack that could even be a whole meal if you doubled or tripled the number of apples.
Here’s the recipe, in three easy steps:
1. Acquire an apple and wash it.
2. Poke several holes in it with a fork (this is important–you don’t want to be cleaning exploded apple out of your microwave)
3. Microwave for three minutes (up it to four or five if you’re microwaving two or three apples).
Might sound weird, but it’s delicious–hot and sweet like apple pie but without all the sugar. And in winter it’s a great way to eat otherwise cold food. Yummy on its own, but also nice with a dollop of brie or Camembert cheese and some walnuts.
